The coffee
Washed Colombian decaffeinated by the sugarcane EA method at a plant in the Cauca valley. About 97% of the caffeine is removed — that's what decaf means everywhere; no process takes all of it.
Brewing
Same as the house blend: 60g per litre. Decaf beans are more brittle, so they grind slightly finer at the same setting. If the cup tastes muddy, go one notch coarser.
