The coffee
60% natural Brazil from Cerrado, 40% washed Colombia. Roasted to the first signs of second crack and dropped — darker than our filter roasts, but much lighter than a supermarket espresso.
Brewing
Start with 18g in, 36g out, 28 seconds. Give it ten days from roast; espresso roasts need longer to settle than filter, and a fresh bag will gush and taste hollow.
